Mushroom Masala

Mushroom Masala

Ingredients:

1. Mushroom - 1 cup
2. Onion - 1 
3. Tomatoes -2
4. Green Capsicum - 1
5. Ginger-Garlic paste - 1 tsp
6. Turmeric powder - 1/4 tsp
7. Chilly powder - 1tsp
8. Coriander powder - 3/4 tsp
9. Garam Masala powder - 1tsp
10. Coriander leaves - few
11. Salt & Oil

How to Cook:

Chop the onions, green chillies, mushrooms and green capsicum and keep it aside. Heat oil in a pan, add the chopped onions and green chillies and saute well. Add the ginger-garlic paste and saute followed by the chopped capsicum and mix well. Add the chopped mushrooms and tomato puree and cook it for 5 minutes. Add salt, turmeric powder, chilly powder, coriander powder & garam masala powder and cook for 10 minutes or till the gravy thickens. Garnish it with coriander leaves and serve with hot paratas :)

Babycorn Masala

Babycorn Masala

Ingredients:

1. Babycorn - 1 cup
2. Onion - 1
3. Green chilly - 2
4. Ginger - Garlic paste - 1tsp
5. Tomato - 2
6.Turmeric powder - 1/2 tsp
7. Chilly powder - 1 tsp
8. Coriander powder - 3/4 tsp
9. Garam Masala powder - 1 tsp
10. Almonds - 10 nos
11. Fresh Cream - 1/2 cup
12. Coriander leaves - few
13. Oil & Salt

How to Cook:

Chop the onions, green chillies, babycorn and keep it aside. Boil the tomatoes and puree it. Boil the babycorn for  5-7 minutes. Heat oil in the pan and add the chopped onions and green chillies. Saute it well. Add the ginger-garlic paste and mix well. Add the boiled babycorn pieces. Saute it followed by the tomato puree and cook till the raw smell disappears. Add the turmeric powder, chilly powder, coriander powder and garam masala powder and mix it well. Grind the almonds (you can also use cashewnuts instead of almonds) and add it to the gravy and mix well. Add the fresh cream (I used the layers of cream from the boiled milk) and salt and cook till the gravy thickens. Garnish it with coriander leaves. Serve hot with parathas.

Mushroom Chettinad


Mushroom Chetinad

Ingredients:

1. Onion - 1
2. Tomato - 1
3. Mushrooms - 1 cup
4. Green Peas - 1/2 cup
5. Curry leaves & Salt
6. Coriander leaves

To grind:

1. Grated Coconut - 5 tbsps
2. Coriander seeds - 1tbsp
3. Jeera - 1tsp
4. Fennel Seeds - 1 tsp
5. Peppercorns - 1tsp
6. Dry chillies - 7
7. Cardamom- 3
8. Cloves - 3
9. Cinnamon - 1 small stick
10. Chopped ginger & garlic - 1 tbsp

How to Prepare:

Heat oil in a kadai and add the grated coconut, coriander seeds, jeera, fennel seeds, peppercorns, dry chillies, cardamom, cloves, cinnamon and the chopped ginger and garlic. Roast them well. When it cools down grind it to a smooth paste. Keep it aside. Heat oil in a kadai, add the chopped onions, tomatoes and saute well. Add the grinded masala and toss well. Add the chopped mushrooms & green peas and add water and salt and cook for 10 minutes will the gravey becomes thick. Garnish it with coriander leaves. Serve with chapathis!!!

Pictorial:

Roast all the ingredients which is said above to grind. Grind it to a smooth paste. Heat oil and add the chopped onions.

 Add the chopped tomatoes.                                                       Add the curry leaves

 Add the grinded masala                                                              Add the mushrooms


 Add the green peas, salt and water and cook for 10 minutes.

Serve hot with chapathis!!!!

Pav Bhaji

Pav Bhaji

Ingredients:

1. Onion - 1
2. Tomato - 2
3. Capsicum -1
4. Potato - 1 ( Boiled)
5. Frozen Green peas - 1/2 cup
6. Jeera - 1tsp
7. Chilly- garlic paste - 1 tbsp
8. Pav Bahji Masala Powder - 1.5 tbsp
9. Chilly powder -1 tsp
10. Butter & Salt
11. Coriander leaves.

For Pav:

1. Pav Buns - 6
2. Butter

How to prepare:

Heat butter. When it melts, add the jeera. Then add the chilly-garlic paste and saute well. Add the chopped onions followed by chopped capsicums. Add the chopped tomatoes and saute well till it becomes mushy. Add the chilly powder and the pav bhaji masala powder. Saute well. Add the frozen green peas and the boiled potatoes and mix well. Mash it slightly. Cook for 10 minutes. Garnish it with coriander leaves.

For Pav:

Heat Butter. Slice the pav buns into two pieces.  Place the buns on the melted butter. Slightly toast it.
