Mushroom Chettinad


Mushroom Chetinad

Ingredients:

1. Onion - 1
2. Tomato - 1
3. Mushrooms - 1 cup
4. Green Peas - 1/2 cup
5. Curry leaves & Salt
6. Coriander leaves

To grind:

1. Grated Coconut - 5 tbsps
2. Coriander seeds - 1tbsp
3. Jeera - 1tsp
4. Fennel Seeds - 1 tsp
5. Peppercorns - 1tsp
6. Dry chillies - 7
7. Cardamom- 3
8. Cloves - 3
9. Cinnamon - 1 small stick
10. Chopped ginger & garlic - 1 tbsp

How to Prepare:

Heat oil in a kadai and add the grated coconut, coriander seeds, jeera, fennel seeds, peppercorns, dry chillies, cardamom, cloves, cinnamon and the chopped ginger and garlic. Roast them well. When it cools down grind it to a smooth paste. Keep it aside. Heat oil in a kadai, add the chopped onions, tomatoes and saute well. Add the grinded masala and toss well. Add the chopped mushrooms & green peas and add water and salt and cook for 10 minutes will the gravey becomes thick. Garnish it with coriander leaves. Serve with chapathis!!!

Pictorial:

Roast all the ingredients which is said above to grind. Grind it to a smooth paste. Heat oil and add the chopped onions.

 Add the chopped tomatoes.                                                       Add the curry leaves

 Add the grinded masala                                                              Add the mushrooms


 Add the green peas, salt and water and cook for 10 minutes.

Serve hot with chapathis!!!!

Pav Bhaji

Pav Bhaji

Ingredients:

1. Onion - 1
2. Tomato - 2
3. Capsicum -1
4. Potato - 1 ( Boiled)
5. Frozen Green peas - 1/2 cup
6. Jeera - 1tsp
7. Chilly- garlic paste - 1 tbsp
8. Pav Bahji Masala Powder - 1.5 tbsp
9. Chilly powder -1 tsp
10. Butter & Salt
11. Coriander leaves.

For Pav:

1. Pav Buns - 6
2. Butter

How to prepare:

Heat butter. When it melts, add the jeera. Then add the chilly-garlic paste and saute well. Add the chopped onions followed by chopped capsicums. Add the chopped tomatoes and saute well till it becomes mushy. Add the chilly powder and the pav bhaji masala powder. Saute well. Add the frozen green peas and the boiled potatoes and mix well. Mash it slightly. Cook for 10 minutes. Garnish it with coriander leaves.

For Pav:

Heat Butter. Slice the pav buns into two pieces.  Place the buns on the melted butter. Slightly toast it.

Kadai Paneer


Kadai Paneer

Ingredients:

1. Onion - 1
2. Green Chilly - 1
3. Green Capsicum - 1
4. Red Capsicum -1
5. Paneer cubes - 1 cup
6. Ginger- Garlic paste - 1.5 tsp
7. Coriander leaves

For Grinding:

1. Jeera - 1tsp
2. Fennel Seeds - 1tsp
3. Peppercorns - 1.5 tsp
4. Coriander seeds - 1.5 tsp
5. Cloves -3
6. Cardamom -3
7. Onion - 1
8. Tomato - 1

How to Prepare:

Heat oil and roast the jeera, fennel seeds, peppercorns, coriander seeds, cloves, cardamom and keep it aside. Heat oil again and add the chopped onions and saute well followed by chopped tomatoes. Saute it well till the tomatoes gets mushy. Keep it aside. Grind the dry ingredients to a powder. Add the sauted onions and tomatoes to it and grind it to a smooth paste. Cut the onion and capsicums into bigger pieces. Heat oil in a kadai and add the onions and green chillies. Add the green and red capsicum and saute well. Add the masala paste and saute well and add little water and let it cook for 5 minutes till the vegetables becomes soft. Add the paneer cubes andsalt and cook it till the gravy becomes thick. Garnish with coriander leaves. Serve it with ho chapathis!!!

 Heat oil and add the chopped onions. Add tomatoes and saute well. Grind the dry ingridients along with the onion and tomato to a smooth paste.

 Heat oil. Add the chopped onions and green chillies. Add ginger-garlic paste

 Add the green and red capsicums                                         Add the grinded masala paste

 Add water and cook till the vegetables become soft. Add the paneer pieces

 Cook for 6-7 minutes till the gravy becomes thick. Garnish it with coriander leaves

Kadai Paneer is ready. Serve it with hot chapathis!!!!

Jeera Aloo


Jeera Aloo

Ingredients:

1. Potatoes - 1 cup
2. Jeera - 2 tbsp
3. Coriander Seeds - 1tbsp
4. Chilly powder - 1 tsp
5. Coriander leaves - few
6. Salt

How to Prepare:

Boil the potatoes. Cut them into big cubes. Dry roast the jeera and grind it to a fine powder. Add oil in a kadai, add jeera followed by the crushed coriander seeds. Add the potato cubes and saute it well. Add the chilly powder, roasted cumin powder and salt. Toss it well. Cook for 5 minutes. Garnish it with coriander leaves. Jeera Aloo goes well with chapathi and rice.
