MINESTRONE SOUP |
Minestrone soup is an Italian origin consisting of vegetables, beans, pasta and meats. I love different type of soups & salads. The broccoli soup which I made earlier was a mega hit in my home which motivated me to try this soup. Since it has pasta, kids will also love this soup and its quite filling for a meal.
Ingredients:
1. Rajma - 1/2 cup2. Shell Pasta - 1/2 cup
3. Onion -1
4. Carrot - 1
5. Celery - 2 stalks
6. Zucchini - 1
7. Garlic - 3 pods
8. Tomato - 3
9. Spinach - 1/4 cup
10. Basil - 1 tsp
11. Parsley - 1 tsp
12. Italian seasoning - 2 tbsp
13. Pepper - 1 tbsp
14. Salt
How to Prepare:
Soak Rajma overnight in water for 6 to 8 hours and pressure cook the rajma and keep it aside. Chop all the vegetables to small pieces. Boil water in a pan and add tomatoes to the boiling water for 2 minutes. When it cooled down, remove the skin and grind it to a smooth paste. Heat olive oil in a kadai and add the garlic. When it is little fried add the chopped carrots,onion and celery and saute it well. Add the grinded tomatoes to it and cook for a minutes. Add the black pepper powder and the rajma and let it cook for 2-3 minutes. Add the shell pasta and cook it for 8-9 minutes till the pasta is cooked. Close it with a lid. Add Zucchini and spinach, italian seasoning, dry basil and parsley powder and salt and cook for 5 more minutes in a medium flame. Once the soup become little thick, switch it off and serve hot with grated parmesan cheese. (Parmesan cheese is optional)
